Balsamic Roasted Asparagus and Grape Tomatoes


Ingredients:

1.5 cups of asparagus washed ends trimmed

½ cup grape tomatoes

2 tsp olive oil

1 tbsp of balsamic dressing – sugar free

1 garlic clove minced

½ tsp salt

½ tsp pepper

Method:

Preheat oven to 425 F. Place asparagus and tomatoes on a small baking sheet or small casserole dish. Drizzle over olive oil, balsamic dressing and sprinkle with garlic, salt and pepper. Toss together right in pan. Roast for 15 minutes turning once during roasting time.

Recipe yields 2 cups of vegetables, 2 tsp of oil, and 2 serving of dressing.

Tip: Maintenance can use choice of balsamic dressing
