Gingerbread Cake


1 pk plain pancake

1 pkg vanilla pudding

2 pkg vanilla drink mix

1/2 tsp baking soda

1 tsp baking powder

2 tbsp gingerbread spice

2 eggs

8 tsp grape seed oil

1/2 cup maple syrup

1 cup of fine grated jicama or chayote – all excess water squeezed out.


Mix 1 pk plain pancake, 1 pkg vanilla pudding, 2 pkg vanilla drink mix, 1/2 tsp baking soda, 1 tsp baking powder, and 2 tbsp gingerbread spice.

Mix 2 eggs, 8 tsp grape seed oil and 1/2 cup maple syrup and 1 cup choice of veggie.

Mix wet ingredients into dry. Use a silicone spatula and keep folding in until all powder is worked in.

Preheat oven to 375.

Pour into parchment lined loaf pan, and bake for 40 minutes.

Can make muffins or mini muffins as well.

Tip: Substitute cappuccino or chocolate drink mix for pudding
