Vegetable Medley with Ginger


Ingredients:

¼ cup cauliflower florets

¼ cup broccoli florets

¼ cup of grape tomatoes

¼ cup of diced cucumber

1 cup of spinach or spring mix

2-4 hard boiled eggs sliced

Dressing:

2 tbsp of lemon juice

1-inch fresh grated ginger

1 garlic clove pressed or minced

1 tsp of ground turmeric

1 tsp of ground curry

1 tbsp of apple cider vinegar

½ tsp fresh ground pepper

½ tsp sea salt

2 tsp of olive oil

Puree or whisk all ingredients together, store in sealed container or glass jar until use.

Method:

In a medium bowl toss, cauliflower, broccoli, tomatoes, cucumber, spinach, and sliced eggs. Drizzle dressing over top, toss once more and serve.
