Ingredients:
2 cups of rutabaga puree
¼ cup of Walden Farms Maple Syrup
1 ounce of milk or unsweetened almond milk
1 egg
2-4 tsp of olive oil.
½ tsp of salt
½ tsp vanilla extract
¼ tsp of nutmeg
2 tbsp of Walden Farms Marshmallow
1 serving of Candied Cinnamon Trail Mix – optional
Method:
Preheat oven to 350 degrees. In a bowl whisk together rutabaga, maple syrup, milk, egg, oil, salt and vanilla. Whisk all ingredients together well. Transfer mixture to a baking dish. Bake for 30 minutes, then sprinkle nutmeg and drizzle on Walden Farms marshmallow and broil on low for 8-10 minutes. Alternatively sprinkle 1 serving of Candied Cinnamon Trail Mix over the casserole in the last 10 minutes of baking.
Tip: Phase 4 can replace oil with 2 tbsp of butter.
