Roasted Kohlrabi

Ingredients: 2 cups of kohlrabi 2 tsp of olive or grape seed oil 1/2 tsp salt 1/2 tsp pepper 1/4 tsp of Oregano 1/4 tsp of paprika 1/4 tsp of chipotle chili spice

Method: Peel and cut Kohlrabi into wedges (mimic potato wedges). Place in a medium bowl and add all spices, tossing well. Preheat oven to 425 degrees. Line baking pan with parchment paper. Place onto baking sheet and roast for 30-40 minutes turning every 10 minutes. Delish accompaniment to any dish.
