Roasted Garlic & Pumpkin Seed Cauliflower


2 cups of cauliflower florets - larger pieces

1 garlic clove minced

Sea salt


2 tsp olive oil - divided

1/4 cup of fresh parsley chopped

2 tsp of lemon juice

2-3 tbsp of water

1 package of trail mix ground fine - divide in half


Place cauliflower florets in baking dish and brush with 1 tsp of olive oil. Sprinkle with salt, pepper, 1 tsp of lemon juice, garlic and 1/2 of the pack of ground trail mix. Roast at 400° for 30 minutes. While cauliflower roasts, purée together water, 1 tsp of oil, 1 tsp of lemon juice, parsley, salt, pepper, and the other half of the trail mix until smooth. Remove cauliflower from oven and pour purée over roasted cauliflower. Phase 3 and 4 can replace cauliflower with pecans, walnuts, pistachios or regular pumpkin seeds.
