Rhubarb & Lime Salsa


Ingredients:

1 cup of chopped rhubarb

¼ cup of diced red onion

½ cup diced orange or yellow pepper

½ cup of diced green pepper

¼ cup of fresh cilantro

¾ cup diced tomatoes.

¼ cup diced jalapeno pepper

½ tsp salt

½ tsp fresh ground pepper

Fresh lime juice from 1 lime

1 tbsp of Walden Farms Maple Syrup

1 small garlic clove through a press


Method:

Mix all ingredients together well. Refrigerate for a minimum of 2-3 hours. You can stir occasionally to blend the flavors.

Recipe yields 3 cups of vegetables and ¼ serving of sweetener.

Excellent with any protein chips, a topping for salads, and proteins such as fish and chicken.

Excellent choice for potlucks and meeting daily vegetable requirements.
