
Ingredients:
8 oz of cod fillets
2 tsp olive oil - optional
1/8 tsp cayenne
1/2 tsp salt
1/2 tsp pepper
1/2 lemon cut into wedges .
Parsley for garnish
Method:
Bring cod to room temperature. Pat dry. Use a not stick skillet and turn heat on high. Add oil if using in pan. Place fish in hot skillet and cook 2 - 4 minutes per side. Sprinkle each side with salt, pepper, and cayenne. Remove from heat and squeeze fresh lemon juice over top. Garnish with parsley.
Variation:
Follow above recipe. Make crumbs out of your favorite IP chip with a bullet, food processor or ninja. Add salt , pepper and cayenne to crumbs. Beat 1 egg really well.
Dredge fillet pieces in beaten egg , then crumbs , and cook 2 -Â 4 minutes per side.
