Our Seattle Salad


1 cup of fine spiralized raw kohlrabi

1 cup of fine spiralized squash, yellow summer squash, chayote, maintenance can use winter squash.

1 tsp of roasted cumin seeds

1 serving of mint chimichurri recipe

2 tbsp of fresh herbs of choice – I like cilantro and parsley




Pan roast cumin seeds for 5 min over low-medium heat until they become fragrant.

Roast your choice of spiralized squash for 20 min at 400 degrees.

Assemble in a medium bowl, kohlrabi, choice of squash, 1 serving of mint chimichurri, cumin, a bit of salt and pepper and toss well.

Plate salad and garnish with fresh herbs.

Maintenance can use more servings of the mint chimichurri on the base salad recipe for more intense flavor.
