Kohlrabi and Radish Salad


1 cup of kohlrabi, peeled and shredded or cut into thin matchsticks

1 cup of radishes, washed, ends removed and mandolin sliced thin

¼ cup of green onions diced

Juice from half of lemon or lime

1 tbsp of Apple Cider Vinegar

2 tsp of olive oil

1 tsp sugar free granular sweetener, or 1 serving

2 tbsp of fresh mint, minced fine

Pinch of salt


Toss kohlrabi, radishes, and green onions in a medium bowl. Now add lemon or lime juice, Apple Cider Vinegar, olive oil, sugar free sweetener, mint, and salt.

Refrigerate for 15 minutes or more, adjust seasoning to taste.

Alternate Dressing:

Juice from half a lemon or lime

1 tbsp Apple Cider Vinegar

2 or more tsp of olive oil

1 tsp of sugar free granular sweetener.

Pinch of Salt

Fresh Ground Pepper

Choose one of the following herbs minced, parsley, cilantro, rosemary, or basil.

Mix by hand or puree.
