Herb Roasted Chicken


Ingredients:

1 chicken

1 lemon

1 bunch of fresh herbs such as rosemary, thyme, or a mixture

1 tbsp of oil

½ tsp Salt

½ tsp Pepper

2 garlic cloves fine minced

Method:

Bring chicken to room temperature for 30 minutes.

Pierce lemon with fork all over and place inside chicken cavity along with your choice of herbs.

Mix oil, salt, pepper, and garlic together and rub on top of the bird and under the skin if you can.

Preheat oven to 450F

Bake chicken for 15 minutes, reduce heat to 350F and roast for 20 minutes per pound.

Remove from oven, cover and let rest for 15 minutes before carving.

Tip: You may double the entire ingredient list if roasting a larger bird.

Tip: Use your favorite fresh herbs.
