Ingredients:
1 package pumpkin spice latte
1 package apple oatmeal
1 tsp pumpkin spice
½ tsp baking powder
1 egg beaten
½ cup fine grated jicama liquid squeezed out
1 tsp fresh fine minced ginger
2 ounces of Skinny Syrup Pumpkin Caramel – or similar flavour
1 ounce of water or milk
1 tbsp additional water pumpkin syrup
2 tsp of grape seed oil – optional
Method:
Preheat oven to 350°F
In a small bowl fluff up fine grated jicama, add in ginger and 1 ounce of Skinny Pumpkin Syrup Mix well and let syrup soak into jicama.
In a small bowl add pumpkin spice latte, apple oatmeal, baking powder and pumpkin spice mixing well.
Beat the egg and add into the bowl with the jicama, add water or milk, oil if using and additional tbsp of water or syrup, mixing ingredients well.
Mix the wet ingredients into the dry ingredients until smooth.
Pour into a parchment lined loaf or baking dish – I like 6-inch small baking dishes.
Bake for 25-30 minutes. Remove from oven and cool.
Brush with Pumpkin syrup and a sprinkle of pumpkin spice.
Tip: Substitute apple oatmeal with vanilla drink mix
Yield: Recipe yields 2 unrestricted servings, each serving contains ¼ cup of vegetable, 1 tsp of oil, 1 serving of sweetener, and ½ ounce of protein.
