Ingredients:
1 1/4 cup of thin sliced fennel
1/2 cup grated yellow summer squash
1/4 cup of thin sliced green onion
2 garlic cloves pressed
2 tsp of olive oil
1/2 tsp salt
1/2 tsp fresh cracked pepper
1/2 tsp cumin
1 tbsp fresh parsley - optional
2 tsp of fennel fronds
Method: In a skillet over medium heat add oil and garlic to the pan, start to sauté the garlic adding the fennel to the hot pan. Cook and caramelize the fennel. Once fennel is turning a nice light brown add onions and squash. Continue caramelizing. Add salt, pepper, and cumin, stirring for a few more minutes. Remove from heat and garnish with parsley and fennel fronds.
