Egg Salad – Salad
2 cups of romaine lettuce shredded
1 cup of fine diced cucumber
¾ cup of fine diced celery
¼ cup fine diced green onion
1 tbsp of diced chives
1 tbsp of fresh chopped dill
6 hard boiled eggs discard 2 egg yolks from the 6
2 tbsp WF Amazin Mayo
1 tbsp lemon juice
1 tsp of Dijon mustard
¼ tsp of paprika
½ tsp of sea salt
½ tsp fresh ground pepper
Whisk all ingredients together until well blended.
In a medium bowl add in cucumber, celery, green onion, chives, dill and chopped eggs. Now add the dressing and gently mix until it's all well combined.
Place 2 cups of shredded romaine on a plate and spoon the egg salad mixture over the romaine.
Sprinkle additional sea salt and fresh ground pepper.
Garnish with a sprinkle of paprika
