Baked Oatmeal & Chayote Hasselback Style


Ingredients:

1 large chayote washed

1 packet apple oatmeal

1 tsp cinnamon

1 beaten egg

2 tbsp sugar free maple syrup

1 tbsp milk, or water

Method:

Preheat oven to 400°. Place chayote in a small baking dish and bake for 1 hour. Remove from oven and let cool for a few minutes. Slice 1/8-inch slits across chayote stopping before you reach the bottom, do not cut all the way through.

Sprinkle ½ tsp of cinnamon in-between each slice of chayote, now drizzle one tbsp of maple syrup in between each slice.

Beat egg and add in milk, 1 tbsp maple syrup, and 1/2 tsp of cinnamon. Mix well and pour over and in between each slice in the chayote. Reduce oven temperature to 350° and bake for 20 minutes.

Recipe yields 1.5 ounces of protein, 1 cup of vegetable, and 1 unrestricted packet
