Apple Pie Smoothie


Ingredients:

2 cups of diced chayote squash

¼ cup of Walden Farms Maple Syrup

1-2 tsp of apple pie spice

1 cup of water

1 IP Vanilla Drink

1 cup of water

½ cup of ice

Method:

In a small saucepan with a lid add, diced chayote, maple syrup, apple pie spice, and water. Bring ingredients to a simmer and cover. Stir every 10 minutes three times for a total of 30 minutes.

Remove from heat and let cool. Mash or puree chayote.

Once cooled spoon into ice cube trays and freeze.

This will yield 2 cups of chayote cubes; I recommend divided into 1 cup portions and storing in freezer.

Smoothie:

In a blender place 1 cup of water, ½ cup of ice cubes, 1 package of vanilla drink mix, and 1 cup of chayote ice cubes. Blend until smooth.

Apple Pie Spice:

4 tbsp ground cinnamon

1 tbsp ground allspice

2 tsp ground nutmeg

1 ½ tsp ground ginger

½ tsp ground cardamom

¼ tsp ground cloves

Mix together ground spices and store in a glass jar.
