Zucchini Coffee Cake
1 cup fine grated zucchini (squeeze out moisture)
½ tsp baking powder
2 pkg IP Plain Pancake
1 tbsp instant coffee
2 tsp oil
1/2 cup IP maple syrup (divided)
In a small bowel combine egg, zucchini, maple syrup, and oil. In another bowl combine 2 pancake mixes, baking powder and instant coffee granules. Combine wet ingredients into dry. Pour into a parchment paper lined 9” cake pan. Bake at 350 for 20 min.
