Ingredients:
1 pkg of vanilla drink mix
1/8 tsp of baking soda
1/4 tsp of baking powder
1 tsp of sugar free granular sweetener
1 egg yolk
2 tsp of grape seed oil
1 tbsp of milk or unsweetened almond milk
Mix dry ingredients together in one bowl and wet ingredients together in a separate bowl. Combine the dry and wet ingredients together. You will need to work with a silicone spatula and keep folding the ingredients until they are combined.
Wrap batter in parchment paper, place in the fridge and chill for two hours or more.
Roll batter out thin in-between two pieces of parchment paper. Use a 1-2 inch cookie cutter to cut your shapes and place them on a parchment paper lined pan. Re-form all the extra dough and re-roll them out until all batter is used.
Bake at 325° for five minutes. Remove from oven and cool.
Melt some Walden Farm jams and brush over each cookie. A little melted raspberry chocolaty temptation bar makes a lovely garnish.
