Strawberry Wafer Rhubarb Square


Ingredients:

1 package of strawberry wafers

1 cup of fine diced rhubarb, thawed and drained

1 packet of raspberry jello


Method:

Prepare jello as per package directions and let cool at room temperature.

Split the two halves of the wafer cookies into 4 pieces, place them in the bottom of 2x4 inch single serving baking dish.

Place the 1 cup of fine diced rhubarb over the wafers. Next pour the cool jello over the rhubarb and wafers.

Cool in the fridge until jello is set.

Recipe yields 1 unrestricted serving, 1 cup of vegetable and 1 collagen product that you may use as a free item every second day.
