Snow Pea & Radish Salad with Lemon Dill Dressing

Ingredients:

Vegetables:

1 cup snow peas julienned.

1/2 cup radish julienned.

¼ cup yellow pepper diced.

¼ cup green onions sliced.

In a medium bowl add all prepped vegetables.

Pour over dressing, toss well, and refrigerate until use, toss vegetables again before use.


Dressing:

1.5 tbsp. fresh dill chopped.

Juice from 1 medium lemon.

1 tsp lemon zest

1 tsp Dijon mustard

1 tbsp of white vinegar or coconut vinegar

1 garlic clove pressed or 1 tsp.

1 tbsp water

4 tsp olive oil

¼ tsp salt

¼ tsp pepper


Whisk together or immersion blend, pour over vegetables tossing well.

Maintenance may add 2 more tsp of olive oil.

Maintenance may use snap peas.
