Shrimp Ceviche

Ingredients: 8 oz of thawed and drained salad shrimp Juice of one lemon Juice of one lime 2-8 tsp of your favorite olive oil or you may omit 1 cup of jicama diced 1 cup of cucumber diced 1 cup of tomato diced 1/2 cup of sliced red onion 1/2 cup of cilantro (stems removed) 1/4 to 1/2 teaspoon of Dried chilies Fresh ground sea salt and pepper
Combine all ingredients well. Place in a sealable bag or container so that you may toss and marinate periodically while refrigerating. This salad is easy to divide into 1 to 4 servings. You may want to add your daily oil allowance or omit if using oil in another recipe. Maintenance and Phase 4Â clients can add avocado!
