Sauerkraut Soup

Ingredients:

16 ounces of lean ground pork

2 minced garlic cloves

1/2 cup diced green onion

4 cups of chicken stock

4 cups of sauerkraut (including liquid)

2 cups of peeled and diced kohlrabi

2 tsp smoked paprika

1/2 tsp red pepper flakes

Generous fresh ground pepper and salt to taste


In a large soup pot over low heat add: 16 ounces of lean ground pork, cook until well done. Drain off and/or rinse off excess fat, return to pot. Add 2 minced garlic cloves, 1/2 cup diced green onion, 4 cups of chicken stock, 4 cups of sauerkraut (including liquid), 2 cups of peeled and diced kohlrabi, 2 tsp smoked paprika, 1/2 tsp red pepper flakes, and generous fresh ground pepper and salt to taste . Simmer on low for a minimum of 2 hours - to all day. Add a splash of hot sauce before serving for more heat.
