Ingredients:
4 cups of cauliflower florets (3.5 ounces in 1 cup)
2 garlic cloves minced
2 tbsp fresh minced rosemary
½ tsp salt
½ tsp pepper
2 tbsp chives
2-4 tsp olive oil – optional
1 ounce of milk, or reserve water from simmering florets
Method:
Place cauliflower florets in a saucepan and cover with water, sprinkle in ½ tsp of salt.
Bring to a boil and reduce to a simmer and cover. Simmer for 20 -30 minutes, the smaller the florets the faster they will cook.
Remove from heat and drain the water off, reserve 1 ounce of water if not using milk.
In the pot add salt, pepper, 1 ounce of water or milk, oil if using, garlic and rosemary. Use a potato masher and mash the cauliflower to your desired texture.
Garnish with fresh chives.
