8 oz boneless skinless chicken breast
11⁄2 cups sliced rhubarb on the diagonal
1⁄4 cup diced green onions
1⁄4 cup fresh cilantro
1 garlic clove, minced
1 tbsp fresh minced ginger
2 tsp olive oil–optional
1⁄2 tsp sea salt
1⁄2 tsp pepper
1⁄2 tsp ground ginger
1⁄4 tsp ground cinnamon
1⁄4 cup sugar-free maple syrup
Instructions:
Preheat oven to 350 degrees. Combine rhubarb, green
onion, ginger, cinnamon, garlic, oil, sea salt and pepper
in a medium bowl. Add chicken and mix together well.
Transfer to a baking dish, top with maple syrup. Bake
chicken, basting at least once. Bake for 40–45 minutes.
Remove from oven and garnish with fresh cilantro.
➤ You can mix chicken, rhubarb and seasonings and
marinate overnight if time permits. Let sit at room
temperature for at least one hour prior to baking.
Recipe yields: 8oz protein, 2 cups vegetables,
1 serving sweetener
