Pan Seared Salmon & Cauli Rice Bowl


Ingredients:

4-8oz of salmon

1 tsp olive oil

1/2 cup peppers

1/2 cup Bok Choy

1 tbsp brags Aminos

1/2 cup of chicken stock

1/2 tsp paprika

1 clove of garlic through a press

1/2 tsp of ginger minced

1 tsp of lemon zest

1 tbsp of fresh lemon juice

1 cup cauliflower rice


In a pan over medium heat, cook salmon for approx 4-5 min per side. Salt and pepper each side and squeeze fresh lemon juice over. Remove from pan and add 1 tsp of olive oil and sauté 1/2 cup of peppers and 1/2 cup of Bok Choy until tender. Remove and set aside with salmon. In pan add 1 tbsp of brags Aminos, 1/2 cup of chicken stock, 1/2 tsp paprika, 1 clove of garlic through a press, 1/2 tsp of ginger minced, 1 tsp of lemon zest, and 1 tbsp of fresh lemon juice. Heat through until bubbling, add veggies back in until heated through. Place 1 cup of cauliflower rice in a bowl with salmon and pour veggies and sauce overtop. Serve immediately. 4-8 oz of protein, 1 tsp of oil, 2 cups vegetables
