Pad Thai Shrimp


3 oz of carb free fettucine pasta (rinsed)

6 oz of shrimp

2 tsp of grapeseed oil

2 tsp of minced ginger root

1 egg

1/3 cup of sugar free, carb free chicken stock or broth

1 tbsp of vinegar

1 tbsp of lime juice

1 to 2 tbsp of IP maple syrup

1 to 2 tbsp of Brags soy amino's

½ tsp of Cayenne pepper

2 tbsp of fresh cilantro or coriander

½ cup of beans sprouts

½ cup of colored peppers

2 tbsp of green onions

Heat oil, garlic, and ginger root in a pan. Add shrimp and sauté until cooked through. Remove and set-aside. Stir-fry egg and set aside with shrimp. Place fettucine noodles in pan and heat through. While tossing, add chicken stock, vinegar, lime juice, IP maple syrup, Braggs soy amino's, and cayenne. Keep stirring until liquid starts absorbing into the fettuccine. Add sprouts, peppers, green onions, cilantro/coriander to finish.

You may replace zero carb noodles with zucchini noodles
