Gingerbread Muffins


Ingredients:

1 pkg vanilla drink mix

1 pkg plain pancake

1/4 tsp baking powder

2 tsp gingerbread spice

1 egg

1/4 cup of Ideal Protein Maple Syrup

4 tsp of grape seed oil

(Optional) mix in 1/2 cup of jicama or chayote


In a small bowl combine: 1 pkg vanilla drink mix, 1 pkg plain pancake, 1/4 tsp baking powder, and 2 tsp gingerbread spice. In another small bowl whip together: 1 egg, 1/4 cup of Ideal Protein Maple Syrup and 4 tsp of grape seed oil. (Optional) Mix in 1/2 cup of jicama or chayote - make sure all excess liquid is removed - squeeze it all out.

Mix wet ingredients into dry. Combine well. Fill parchment paper lined cup 1/2 - 3/4 full and bake for 12-14 min at 350 degrees.

Gingerbread Spice : make and store in a sealed jar : perfect for, cakes , cookies , muffins, breads ect. 3 tbsp ground cinnamon 2 tbsp ground ginger 1 tbsp ground cloves 1 tsp allspice 1 tsp nutmeg 1 tsp cardamom (optional but good)
