Gingerbread Cookies


1 pk plain pancake 1 pkg vanilla pudding 2 pkg vanilla drink mix 1/2 tsp baking soda 1 tbsp gingerbread spice

2 eggs

8 tsp grape seed oil

1/4 cup maple syrup

Mix 1 pk plain pancake, 1 pkg vanilla pudding, 2 pkg vanilla drink mix, 1/2 tsp baking soda and 1 tbsp gingerbread spice. Mix 2 eggs, 8 tsp grape seed oil and 1/4 cup maple syrup. Mix wet ingredients into dry. Use a silicone spatula and keep folding in until all powder is worked in. Form a disc and wrap in parchment paper and then airtight cling wrap. Refrigerate for 4 or more hours.

Roll with rolling pin between 2 pieces of parchment paper. (I like them thin) Cut with cookie cutters - use all dough - reshape and roll :) Bake at 350 for 8 min. Cool and brush with IP maple syrup.
