
Ingredients:
2 cups of diced and peeled cucumbers
½ cup of diced red onion
¼ cup of fresh cilantro
¼ cup of fresh mint
1 jalapeño seeded, and fine minced
Lime juice from 1 lime
1 large garlic clove fine minced or put through press
½-1 tsp of ground cumin
2-4 tsp of olive oil
½ tsp of salt
½ tsp of pepper
Method:
In a medium bowl, place cucumbers, red onion, cilantro, mint, jalapeño pepper, and garlic and toss very well.
Sprinkle in cumin, salt and pepper.
Drizzle over the juice from 1 lime
Drizzle over the olive oil.
Toss well.
Taste and adjust seasoning, you can add more salt, pepper, garlic, or any of seasoning of choice. Cover and chill and stir occasionally
