Chocolate Rhubarb Cake



1 pkg chocolate drink mix

1/2 tsp baking powder

2 tbsp dried rhubarb (recipe here)

1 tbsp cocoa powder (Phase 4 ONLY)

1/2 beaten egg

1 tbsp of milk

2 tsp oil

1 tbsp water


1 raspberry temptation chocolate bar

2 tbsp dried rhubarb (recipe here)

1 tbsp hot milk

Combine 1 pkg chocolate drink mix, 1/2 tsp baking powder, and 2 tbsp dried rhubarb (Phase 4 can add 1 tbsp cocoa powder). Combine dry ingredients well.

In another bowl, combine 1/2 beaten egg, 1 tbsp of milk, 2 tsp oil and 1 tbsp water. Mix wet into dry ingredients until smooth. In a parchment lined or non stick 8x4 pan, smooth batter into a thin layer. Bake at 350 for 12-15 min. Remove and cool.

While cake cools prepare icing. In a small double boiler over low heat, melt 1 raspberry temptation chocolate bar, add 2 tbsp of dried rhubarb, and 1 tbsp of hot milk. Mix until smooth. Remove from heat and ice cake. *Do not use cold milk as it shocks the chocolate - hardens it fast. Raspberry Temptation is a once a week bar that replaces your restricted for the day.

1 unrestricted, 1 restricted (weekly), 1/2 cup vegetables, .75 ounces protein, 2 tsp oil
