Chocolate Coconut Oatmeal Muffins


2 packages apple Oatmeal 1/2 tsp baking powder 1 egg

4 tsp of grape seed oil

1/2 cup fine grated jicama

1/2-1 tsp of coconut extract

1 chocolate coconut bar (optional)

1 fluid ounce liquid coconut sweetener (optional)

Mix 2 packages Apple Oatmeal and 1/2 tsp baking powder. Set aside.

Beat 1 egg, then add 4 tsp of grape seed oil, 1/2 cup fine grated jicama (squeeze all the water out and fluff back up) and 1/2-1 tsp of coconut extract. Mix wet ingredients into dry ingredients. Pour into muffin tins. Bake at 350 degrees for 15 min Makes 2 servings

Icing : optional Chop 1 chocolate coconut bar into small pieces. Defrost in microwave safe bowl for 30- 50 seconds. Stir in 1 fluid ounce liquid coconut sweetener. Mix until smooth (add more liquid sweetener if you want thinner icing). Take 1 serving of your muffins and divide icing among them. 1 unrestricted + 1 restricted plus 1 sweetener
