Chicken Fajita Cauli Rice Bowl


Ingredients:

8 oz chicken breast

2 tsp olive oil (separated)

1/2 cup of peppers

1/2 cup chicken broth

1 garlic clove pressed

1/2 tsp dried oregano flakes

1/2 tsp cumin

1/4 tsp chile powder

1/4 tsp paprika

1/4 tsp red pepper flakes

1 tsp lime zest

1 tbsp fresh lime juice

1 tbsp fresh chopped cilantro

1 cup of Cauliflower rice

2 tsp chiles

2 tsp jalapeños

1/2 cup raw red onion slices.


In a pan sauté 8 oz of chicken breast in 1 tsp of olive oil, salt and pepper and a fresh squeeze of lime juice. Cook through, remove from pan and set aside. Sauté 1/2 cup of peppers in 1 tsp of olive oil until tender and set aside with chicken. In pan add 1/2 cup of chicken broth,1 garlic clove pressed,1/2 tsp dried oregano flakes, 1/2 tsp cumin, 1/4 tsp chile powder, 1/4 tsp paprika, 1/4 tsp red pepper flakes, 1 tsp lime zest, 1 tbsp fresh lime juice, and 1 tbsp fresh chopped cilantro. Add a dash of salt and pepper, heat through. In bowl, place 1 cup of Cauliflower rice, red peppers, and chicken, pour over sauce, garnish with 2 tsp chiles, 2 tsp jalapeños, and 1/2 cup raw red onion slices. Garnish with cilantro, serve immediately. 8 oz protein, 2 tsp oil, 2 cups vegetables
