Ingredients:
1 pkg IP broccoli cheese soup
3 ounces of water
One cup of finely diced vegetables (broccoli, celery, green onions and red peppers pictured)
4 ounces egg white
Mix together 1 pkg IP broccoli cheese soup, 3 ounces of water and 1 cup of finely diced vegetables.
In a separate bowl, whisk together 4 ounces of egg whites, fresh ground pepper and a little bit of fresh ground sea salt.
Pour egg whites into a medium skillet over medium heat. Place lid over the top to cook the egg whites through. Spread vegetable mixture evenly over your egg white omelette. Fold in half and place lid over pan. Turn off heat and let it sit for a couple of minutes.
Garnish with additional chop veggies if desired.
