Chayote Turnover


Ingredients:

Vanilla Dream Cookie Dough

2 packet of vanilla drink mix

1/4 tsp of baking soda

1/2 tsp of baking powder

2 tsp of sugar free granular sweetener

2 egg yolks

4 tsp of grape seed oil

2 tbsp of milk or unsweetened almond milk


You will need two small bowls. Combine the dry ingredients in one, and the wet ingredients in the other.

Now mix the wet ingredients into the dry, you will need to use a small spatula and keep folding in and mixing until all the protein powder in dissolved into the wet ingredients. Your dough will be thick and sticky, wrap tightly in parchment paper, and place in the fridge to cool.


Chayote Filling

1 cup of chayote , washed, remove seed, and sliced.

1 tsp of cinnamon

2 servings of sweetener, granular or sugar free maple syrup


Place in a saucepan and cover with water, bring to a boil, then reduce to a simmer. Cover and simmer for 20 minutes. Remove from heat and drain off water and let cool.

Once dough is chilled place it between two pieces of parchment paper, you will use a rolling pin to roll your dough nice and thin, about ½ cm thick, roll in all directions to make a nice square shape. Once your dough is rolled you may want

to place it back in the fridge leaving it between the parchment to firm up again, about 30 minutes.

Preheat oven to 350 degrees.

Take dough from fridge remove top parchment paper, and down the centre lay your chayote slices, you may overlap them. Sprinkle cinnamon even over the chayote, and now sprinkle the sweetener, or drizzle it on.

Now fold over one side of the dough towards the center, place hand under parchment paper to guide the dough over, now repeat on the other side.

Using the parchment prevents the dough from ripping while being handled.

Pinch the ends shut, now place your turnover still with bottom parchment in place onto a baking sheet. Bake for 20 minutes.

Remove from oven, turnover may be enjoyed warm or cooled. You may drizzle sugar free maple syrup over turnover.

Recipe yields 2 servings, each serving contains 1 unrestricted protein, 1 tbsp of milk, .5 ounce of protein, 2 tsp of daily oil allowance, 2 sweeteners, and ½ cup of vegetables. If you use additional sweetener journal accordingly.
