Ingredients:
1 cup of Mockamole (recipe below) 1 large English cucumber
8 oz of raw or cooked shrimp 1 minced garlic clove
1/2 tsp dried cilantro
1/2 tsp smoked paprika
1/8 tsp cayenne
1/2 tsp salt
1/2 tsp fresh ground pepper
1-2 tbsp of water
Combine 1 minced garlic clove, 1/2 tsp dried cilantro, 1/2 tsp smoked paprika, 1/8 tsp cayenne, 1/2 tsp salt, 1/2 tsp fresh ground pepper, and 1-2 tbsp of water in a bowl or ziplock bag. Add shrimp and marinate covered for 3 or more hours overnight.
Once marinated, cook in hot sauté pan 2 minutes per side - cool and assemble.
Slice English cucumber on the diagonal or make rounds. You will need the same number of cucumber slices as the number of shrimps your 8 ounces has.
Place Mockamole on top of each cucumber slice, and garnish each one with a shrimp .
