Zucchini Chips


Ingredients:

2 cups of zucchini mandolin sliced

Salt

2 tsp of olive or grape seed oil


Method:

Place zucchini on paper towel or clean tea towels in single layers. Sprinkle a little salt evenly over the zucchini slices and cover with more paper towels or clean tea towels. Place a heavy object over the slices to help absorb the excess liquid for 1 or more hours – or even overnight!

Place parchment paper on baking sheet and mist paper with oil. Place zucchini slices close together on baking sheet and mist with oil.

Preheat oven to 225 – low temperature is best.

Sprinkle choice of seasoning over zucchini chips and bake for 1hr 15min or more until crispy.

Sea salt and garlic

Moroccan Spice Blend

Seasoning salt, garlic and cayenne pepper


Moroccan Spice Blend

1.5 tsp ground cumin

1 tsp ground ginger

1 tsp of ground turmeric

1 tsp ground paprika

1/2 tsp ground cinnamon

½ tsp ground coriander

½ tsp ground allspice

½ ground cayenne pepper

½ tsp ground black pepper

¼ tsp ground cloves

1 tsp salt

Mix all spices together and store in a glass jar, or in an airtight container.
