Ingredients:
4 – 8 ounces of extra lean ground beef
2 cups of spring mix
1 cup of diced cucumbers
½ tsp of seasoning salt
½ tsp of pepper
1 garlic clove pressed
Dressing:
1 tbsp of lemon
1 tbsp of vinegar
1 tsp of oregano
½ tsp salt
½ tsp of pepper
1 tbsp of fresh chopped dill – 1 tsp dry
1 garlic clove minced
2 tsp of olive oil
Blend or puree all the dressing ingredients and store in sealed or glass container and store in fridge until ready to use.
Method:
In a skillet scramble fry ground beef breaking into small bits so the beef evenly cooks. To the beef add the seasoning salt, pepper, and garlic. Remove from heat once cooked and let cool. In a medium bowl add spring mix, cucumbers and ground beef. Drizzle dressing over top and toss well to mix in dressing.
Tip: Maintenance add more oil to the salad dressing.
