Ingredients:
1 cup of diced zucchini
½ tsp coconut extract
½ ounce of pineapple sweetener
½ ounce of coconut sweetener
¼ cup of water
1 vanilla drink
½ tsp of coconut extract
1 cup of water
½ cup of ice
Method:
In a small saucepan add diced zucchini, coconut extract, pineapple and coconut sweeteners and water. Bring to a simmer and cook stirring often for 20 minutes. Remove from heat and cool and mash or puree zucchini.
Spoon into ice cube trays and freeze.
Smoothie:
In a blender add 1 vanilla drink packet, 1 cup of water, ½ cup of ice, ½ tsp of coconut extract, and frozen flavored zucchini cubes. Blend until smooth.
